Easy Fajitas

Waiting is the hardest part.  Most of the work is in the marinade and if you are patient, it does most of the work.  This marinade will work for beef, chicken or pork.

Fajita Marinade

  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1/4 cup tequila (substitute lemon or lime juice if you prefer no alcohol)
  • 4 cloves garlic, minced
  • 1 dried pepper, seeded and minced
  • 1/2 tsp salt
  • 2 Tsp fresh cilantro, minced

Mix ingredients well (using a blender or food processor makes the mixing a breeze) and pour over meat.  Keep in refrigerator at least two days.  Remove from refrigerator and grill.

Look in your grocery store’s produce section for pre-sliced red and green peppers and onion.  Preheat frying pan, pour in small amount of olive oil, add vegetable and salt/adobo seasoning.  Stir fry until cooked but still crisp.

Microwave package of spanish-style rice to serve with fajitas.

Suggested accompaniments include shredded cheese, guacamole, salsa, sour cream and shredded lettuce.
