Waiting is the hardest part. Most of the work is in the marinade and if you are patient, it does most of the work. This marinade will work for beef, chicken or pork.
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1/4 cup tequila (substitute lemon or lime juice if you prefer no alcohol)
- 4 cloves garlic, minced
- 1 dried pepper, seeded and minced
- 1/2 tsp salt
- 2 Tsp fresh cilantro, minced
Mix ingredients well (using a blender or food processor makes the mixing a breeze) and pour over meat. Keep in refrigerator at least two days. Remove from refrigerator and grill.
